This Cold Cucumber Dill Salad is the perfect refreshing, crunchy snack or side dish to enjoy on a hot summer day. All you need is a handful of simple ingredients. Vegan & Gluten-Free. 1 english cucumber thinly sliced 1/4 small red onion thinly sliced (or sub Pickled Red Onions for an extra kick) 1/3 cup fresh dill, chopped 2 tablespoons red wine vinegar 2 tablespoons high-quality extra virgin olive oil 2 teaspoons whole grain mustard large pinch of flaky salt or to taste

✅ Save to try Makes 18 Ingredients: 12 large medjool dates 1/2 cup peanut or almond butter 1 cup almonds, chopped 1/2 cup pistachios, chopped 1/4 cup of each of the following: sunflower, sesame, pumpkin and shelled hemp seeds 1/2 tsp sea salt 1️⃣ Add the dates to a food processor with the nut butter and blend until smooth.
