It is estimated that it requires the harvesting of some 50-70 thousand flowers to produce a mere 0.45 kg (1lb.) of dried stigmas. Prized in European, North African and Asian cuisine the best quality possesses a deep red colour, redolent of honey with a musky earthy flavour. In 1444, any merchant caught selling adulterated saffron was burnt alive in Bavaria - seems a just punishment.
