Whether you prefer breakfast, brunch, or brinner (breakfast for dinner), you are going to love these no-fail light and fruit-filled Blueberry Crepes.

Blueberry Crepes ~~ Flour+eggs+almond milk or regular milk)+water+butter+blueberries

Blueberry Crepes ~~ Flour+eggs+almond milk or regular milk)+water+butter+blueberries * I added a little more almond milk to make thinner. Also added some salt and baking soda. Batter was impossible to mix with a whisk, so I put it in my Ninja blender.

3/4 cup all purpose flour, 2 tablespoons granulated sugar, 1/2 cup milk, 1 egg, 1/4 teaspoon pure vanilla extract, 1 tablespoon melted butter; Place into a blender, blending until well combined. Heat a 12 inch non stick pan over medium heat. Spray lightly with cooking spray. Pour 2-3 tablespoons of crepe batter into pan swirling all the way around to get a nice circular crepe. Cook  until golden then flip and cook for another 30 seconds-1 minute.  Makes10 crepes.
