La alta cocina presenta una elaboración tradicional, como es el estofado de rabo, en forma de raviolis crujientes. Son los Raviolis crujientes de rabo con caldo de garbanzos de Eneko Atxa. El estofado se deshuesa y se monta en terrina, después se corta en dados que se envuelven con panceta y pan de maíz, y se tuestan para que queden crujientes. Toma nota de la receta.
